About the Farm
Aquiares Estate is Costa Rica’s largest continuous coffee farm, nestled on the fertile slopes of the Turrialba volcano. With a legacy dating back to 1890, it has been a pioneer in sustainable coffee farming and community development. Managed by the Robelo family, the estate spans 924 hectares, with 623 hectares under shade-grown Arabica.
The farm sits between two rivers — Aquiares and Turrialba — and is deeply rooted in both history and biodiversity. Over the years, it has evolved into a model of environmental and social responsibility: planting over 50,000 shade trees, providing housing and healthcare for workers, and becoming the first Costa Rican farm to be both Rainforest Alliance certified and carbon negative.

About the Coffee
This Anaerobic Natural lot — named Entre Ríos or “Between Rivers” — is a blend of Marsellesa and Red Obatá, varietals chosen for their disease resistance and cup quality. Grown between 1,100–1,400 masl, the cherries are handpicked in multiple passes to ensure full ripeness.
After harvesting, the coffee undergoes an anaerobic fermentation in sealed tanks with cherry juice (“mosto”), followed by a carefully controlled three-stage drying process: ceramic patios, raised beds, and mechanical drying in Guardiolas. The result is a clean, fruit-forward coffee with vibrant acidity and layered complexity — a standout example of innovation from a farm proving that even in humid Turrialba, naturals and honeys can thrive.
