About the Farm
This decaf comes from Poços de Caldas, a unique coffee-growing region on the rim of an extinct volcano in Sul de Minas, Brazil. Rich volcanic soils and elevations between 1,000–1,300 masl provide ideal conditions for quality coffee. A group of smallholder producers — some of whom have been farming since the 1860s — contribute to this lot. Most harvest by hand, an uncommon practice in Brazil’s typically mechanised industry.
The coffees are all naturally processed on-farm, dried on patios, and then delivered to Bourbon Specialty for final preparation and export.

About the Coffee
This decaf is made up of Yellow Bourbon, Catuaí, and Catucaí varietals. It is decaffeinated using the EA method, also known as the sugarcane decaf process. The EA used comes from fermented sugarcane and is a gentle, natural solvent that preserves flavour integrity while removing 97% of caffeine.
After a low-pressure steam pretreatment, the beans are washed repeatedly in EA to extract caffeine, then vacuum-dried and stabilized. The result is a clean, sweet cup — with no compromise on flavour.
